For some of the city’s most creatively presented cocktails, descend to the basement belly of Waldorf Astoria hotel, where in a former bank vault, Wilson Pires (Portugal’s Barman of the Year, 2014) presents his menu of 10 signature cocktails (all €17,00) on bank notes tucked into leather wallets, along with lock boxes of bar bites from the kitchen of 2-Michelin star Librije’s Zusje.

This classic hotel bar in the 9 streets upped its game with a recent renovation, which emphasises the elegance of the Golden Age canal house. Choose a canal-view table, an armchair by the fireplace or perch at the Art Deco-style bar and order Pulitzer’s new-style Old Fashioned with Zuidam 12-year-old Corenwijn, fermented pineapple syrup and Creole bitters (€15,00).
Pulitzer’s Bar, Keizersgracht 234
Named after the original profession of the famous Dam square hotel’s founder Wilhelm Krasnapolsky, this stylish bar is the home base of startender Tess Posthumus (Best Female Bartender Worldwide, 2015), whose ‘bespoke cocktails’ include the dramatic ‘Cuban Mist’ with rum, apricot liqueur, tobacco bitters and Serrano ham served in a smoke-filled glass cloche.
